What does S. Čapkauskienė, PhD in biomedical sciences, associate professor and dietitian, think of “Blackcurrants with apricots and dates” Sotukai?

Blackcurrants with apricots and dates

Ingredients: almonds, Medjool dates, apricots, flaxseeds, blackcurrants, chilli.

Almonds contain plenty of healthy fats, fibre, protein, magnesium and vitamin E. Almonds have a beneficial effect on cholesterol and glucose levels, and may reduce hunger and promote weight loss.

Dates are packed with vitamins and minerals, including iron, potassium, magnesium and B vitamins. Dates contain plenty of beneficial fibre, so these fruits may contribute to healthy digestion and bowel function. They contain disease-fighting antioxidants, such as flavonoids and phenolic acids, which research suggests may reduce inflammation.

Apricots are low in calories and fat, and are also an excellent source of vitamins A and C.

Flaxseeds are an excellent source of vitamins and minerals (calcium, magnesium and phosphorus). Flaxseeds contain a very high concentration of polyunsaturated fatty acids, also known as “good, healthy fats”, and are an excellent source of fibre and protein. The polyphenols in flaxseeds have anti-inflammatory, antimicrobial, antiallergic, antiatherogenic and antioxidant effects.

Blackcurrants— these berries are particularly rich in vitamin C, containing 4 times as much as oranges. Blackcurrants also have a high concentration of phenolic compounds, particularly anthocyanins (twice as much as in other berries — raspberries, strawberries or blueberries), which act as antioxidants. It is important to know that these dark blue berries also contain potassium, calcium, magnesium and iron. They are also a source of vitamins A, B1, B5, B6 and E.

Chilli— chillies are rich in various vitamins and minerals, but they are usually eaten in small amounts, so they do not make a significant contribution to your daily micronutrient intake. Chillies are rich in antioxidant compounds that reduce inflammation in the body. They contain small amounts of carbohydrates, protein and fibre.
